My Huge Salad
Ingredients:
- baby spinach leaves
- tofu crispies (they had a similar texture to croutons)
- 1/4 of an avocado
- kidney bean salad (scallions, lemon juice, olive oil, salt, pepper)
- red bell pepper
- carrots
- cucumber
- about an ounce of goat cheese
- capful of Newman Own’s light balsamic vinaigrette
- 1/3 of a large sweet potato on the side
