Another good bet for the Winter Shape Up, my Signature Vegetable Soup is chock full of vegetables, super hearty, and absolutely delicious. I never walk away from a bowl feeling unsatisfied. Here’s a shot from my phone in the midst of cooking:
I probably make a big pot of this soup once every… oh… 2-3 weeks. It’s great as leftovers and also freezes well. It does involve a fair amount of chopping veggies (like any good soup) but other than that, it’s easy. And SO worth it.
If you’re lucky enough to live by a Trader Joe’s, you can buy pre-made mirepoix (pre-chopped onion, carrot, and celery). I used that last night and it cut down my chop time by about half.
