Make It: Indian-Spiced Lentils
As a bribe for helping me put together my new couch (Home Reserve, guys… check it out!), I made my family dinner. Well, I made half of it and my dad made the other half. My contribution? Sweet potato fries and a lentil dish.
Trader Joe’s now sells fully cooked lentils, which have been steamed and lightly salted. I boiled them in the bag as directed and then added sauteed carrot, onion, and dried Medjool dates. I used lots of cumin, a dash of chili powder, and salt & pepper to season. I would’ve used curry powder if I’d had some. I also added a bit of vanilla almond milk for creaminess. The lentils came out a little sweeter than I wanted (note to self: dried dates are super sweet!), but still delicious. Next time, to add more complexity, I’d definitely use curry powder in the mix.
The SP fries were pre-cut from TJ’s (how do they always know exactly what I want?!) and baked at 375 for 45 minutes on a baking sheet with olive oil, salt, and pepper. My dad made simple salmon fillets with salt, pepper, lemon juice, and olive oil. He also made sauteed pea greens & spinach.
All in all, I’d say dinner was a success.
