Friday Day in Food
Lunch, 2pm: Leftover polenta & zucchini casserole, salmon, and cucumber-tomato salad
Little of this, little of that. The BEST lunch recommendation I can give to busy people? Leftovers. You only need to cook one or two days a week to have leftovers for days. Just make the full recipe, even if you’re only cooking for one, and voila! Instant lunches.
