Dinner: Variety, the Spice of Life
I made some sweet potato fries (toss fry-shaped SPs in olive oil, salt, and pepper and bake for 25-30 minutes at 425) and ate them with salad (spinach, tomato, goat cheese, pepper, and carrot) and my Italian Tempeh. It was a completely satisfying, nutritious, and tasty dinner. That’s all a girl can ask for, right?
Do you like how I tried to garnish my tempeh with a piece of basil? It looks a little… dumb. Clearly, I’m not very gifted in the arts of food presentation or photography.
Anyway, I cut up a mini seedless watermelon that I’m planning on incorporating into dessert (probably with a little coconut milk ice cream… YES).
