Corn is in season, affordable, versatile, and tasty. Full of fiber (20% daily value per cup) and vitamin B1 (25% daily value per cup), corn is a fairly low-calorie way to add bulk, texture, and flavor to various dishes.
Keep in mind, however, that as far as your body’s concerned, corn is a starch rather than a vegetable in the traditional sense. Meaning, if you’re featuring corn as a star ingredient in your dish, you can skip the side of rice or potatoes since you’re already incorporating an unrefined carb.
