Single-Serve Goat Cheese? SIGN ME UP!

Um, alert! Drop everything! Foodie mecca Trader Joe’s sells SINGLE-SERVE GOAT CHEESE! WHAT! Have you seen these?

Who needs Laughing Cow?! This spreadable, edible goat cheese is probably the most genius thing I’ve seen lately. For 70 calories, you get a pretty good serving of goat cheese that can be used in all sorts of preparations! Melt it over meat or veggies, spread it on toast instead of cream cheese, use it as a dip for crudités… you get the idea.
Most recently, I melted some into a breakfast concoction I whipped up.

Looks questionable, tasted WONDERFUL. This magical concoction contained:
- Leftover sausage, peppers, and onions in tomato sauce
- One egg
- One goat cheese medallion (GENIUS, I tell you!)
- Basil leaves from my patio garden
Breakfast of champions, no doubt. But even if you don’t want to whip up my savory breakfast, go pick up some goat cheese medallions stat! Thank me later.
